The Story
We at Dick Macks have been fortunate indeed to have worked with several different distilleries since 2018 when we did our very first collaboration with Bernard Walsh of Walsh Whiskey. In fact, we believe that our brewhouse has worked in tandem with more distilleries than any other in this country and we are very grateful to each and every one of them to have allowed us to partner with them in bringing some excellent one off, limited edition whiskey to you all. As we are also very grateful to you all for supporting us and purchasing them.
So in this our penultimate collaboration, we have worked with Clonakilty distillery in Cork to bring you a single malt whiskey. We obtained an ex-bourbon cask from Clonakilty and filled this with our Imperial Stout on May 01, 2021. We left this to snooze in our brewhouse on site at the back of the pub until February 2022 whereupon we delivered it ourselves to the beautiful clifftop warehouse at Clonakilty where it was filled with 5 year old single malt whiskey on March 1, 2022. To then do something that we hadn’t done previously, we decided to transfer that whiskey into a first fill madeira cask on April 23, 2024. We at Dick Macks have a sweet tooth and we had always wanted to have a madeira influence in our whiskey and this afforded us the opportunity to do just this. This cask was disgorged on Jan 21 of this year and bottled at 54% for your enjoyment.
